Blueberries: Can you stop munching on these delicious treats? Loaded with nutrients like vitamins and fibre, blueberries are equally good for your body and taste buds. They have been one of my favourite fruits since childhood. 

Did you know that the Blueberry Cheesecake originated because it used to feed the athletes in the Olympic Games in Greece? 

I still recall my first taste of cheesecake. Before arriving in Bangalore, I had never heard of it. So I had a slice of New York Cheesecake when my buddies and I went to a cafe. The first bite was so memorable that I can still taste it. Probably it's one of those memories that just sticks with you. As is always the case, I couldn't stop at one piece and had to have the blueberry cheesecake jar as well. I instantly fell in love with it. It was so creamy and smooth, it just hit the right spots. 

As a baking enthusiast, I knew I had to try making a cheesecake. So I looked up a few recipes on the internet and decided to create a "no bake cheesecake." No-bake cheesecakes use gelatin as a setting agent instead of eggs, and the cheesecake is frozen to set. So, on my first try, a very self-confident young me asked a couple of my friends over to taste the cheesecake.

I followed the recipe and let it chill in the fridge for over 8 hours. Then came the moment of truth, I unmoulded the cheesecake in front of my friends and tried to place it on a plate. AND it fell flat, was liquidy, and spread all over the counter. Obviously, I was disappointed and embarrassed. 

But why did my cheesecake not set? I guess the proportions of the ingredients were off. So make sure your quantities are measured. But the cheesecake (or whatever it turned out to be) wasn't half as bad, taste-wise. So mission failed successfully I guess? Haha

Following that, I spent numerous baking hours and days experimenting with different combinations for the base, fillings, and toppings in order to develop my Baked Blueberry Cheesecake recipe. I attempted a variety of recipes, including strawberry cheesecake, oreo cheesecake, mango cheesecake and even mascarpone cheesecake! My favorite, however, remains the Blueberry Cheesecake.

My current Baked Blueberry Cheesecake has a buttery, crunchy but soft cracker base, a luscious smooth cheesecake centre made with the finest cream cheese, and a sweet yet tangy blueberry compote on top, all baked to perfection! It's a scrumptious experience that your taste buds will savour!
